On 10 December 2025, UNESCO officially inscribed Italian cuisine on the Representative List of the Intangible Cultural Heritage of Humanity, recognising it as part of the world’s living cultural heritage: Italian cuisine inscribed on UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity.

This historic recognition celebrates far more than a culinary tradition. It honours a way of life, a culture of sharing, and the passing down of knowledge, flavours and gestures that have shaped Italy’s identity for generations.

This heritage is, of course, made up of recipes—but above all, of people. Of hands kneading dough, producers safeguarding exceptional ingredients, chefs reinventing tradition while remaining faithful to it, and families gathering around the table. Italian cuisine is culture, memory and connection. It tells the story of unique places where food is one of the most authentic expressions of local identity.

Among these places, the Langhe, Monferrato and Roero hold a truly special place.

Where cuisine tells the story of the landscape

Here, among the vineyard-covered hills recognised as a UNESCO World Heritage Site since 2014, the bond between the land and its cuisine is both deep and natural. Every dish tells a story passed down through generations, and every ingredient carries centuries of knowledge.

Just think of hand-cut tajarin, plin painstakingly folded one by one, vitello tonnato, finely hand-chopped raw beef, the unmistakable aroma of the Alba White Truffle, and traditional desserts such as bunet and Langhe PGI Piedmont Hazelnut cake (discover more in our article Sweet Langhe: 10 Piedmontese desserts you absolutely must try).

Alongside the classic recipes that have made Piedmontese cuisine famous around the world, the region now offers contemporary dining experiences that embrace innovation without losing sight of their roots. It is no coincidence that the area boasts 16 Michelin-starred restaurants, complemented by an outstanding network of traditional osterias, trattorias and local restaurants where cooking remains, above all, an act of genuine hospitality.

Because here, eating well is not a luxury.

It’s simply a way of life.

A heritage worth protecting

UNESCO recognition also brings responsibility.

As highlighted by FIPE – the Italian Federation of Public Establishments, the challenge now is to protect what Italians call “il buono, il bello e il benfatto”—the good, the beautiful and the well made—from a world that too often values speed over quality and short-term profit over lasting value.

Protecting Italian cuisine means protecting its restaurants, village trattorias, family-run businesses, farmers and artisan producers, whose work keeps this heritage alive every single day. Without this network of people and local enterprises, no culinary tradition could continue to thrive.

In Piedmont, this heritage can be experienced everywhere: among the vineyards, at local markets, in home kitchens, in restaurant dining rooms, and in the stories of those who have dedicated their lives to the art of hospitality.
